How to make Sleep Period longer on Sunday

I currently utilize the Sleep period daily from 1:00 am to 5:00 am to allow our ERP to run backup in restricted state. On Sunday it's running a full backup that takes a few hours longer keeping it in restricted state until about 7:30 am. (ERP restricted state blocks all ODBC connections.)Beginning Monday Scribe needs to be active at 5:30am. If processes restart too soon they fail because it cannot connect to the ERP.

Sleep Period settings for the Scribe site does not allow me to extend the time for a specific day. How can I accomplish a longer Sleep Period on Sunday only
